    squid tubes about 750gm ½ cup plain flour 1 teaspoon salt 1 teaspoon black papper ½ teaspoon cayenne pepper Vegetable oil for deep frying Lemon wedges Cotterill Rouse Aioli Slice each squid tube open lengthways lightly score the inside surface and cut into bite sized pieces Fill a heavy based saucepan with one third oil and put on a medium high heat Combine the flour and spices in a bowl Add the squid and toss to cover shaking off any excess To test if the oil is at the right temperature add a small amount of the flour mixture If it sizzles right away the oil is ready Cook the squid in batches until golden brown about 2 minutes then drain on a paper towel Serve with lemon wedges and Cotterill Rouse Aioli Asian Marinated Chicken with Crunchy Slaw Serves 4 INGREDIENTS 500gm chicken breast ¼ cup soy sauce 2 tablespoons oyster sauce 1 red chilli finely sliced 2 teaspoons grated ginger 2 tablespoons peanut oil 1 carrot grated ½ cup bean sprouts ½ red cabbage shredded ½ green cabbage shredded 1 lemon 2 tablespoons Cotterill Rouse Aioli Slice the chicken breasts and add to a bowl with soy sauce
